Cold Weather Comfort in a Bowl

On a cold day, tucking into a bowl of creamy, hot, delicious soup is definitely one of life's simplest pleasures, and Potato Leek Soup is for certain one of my favorites. Like the Cheese Soup recipe I've shared previously, it's easy to make, can be scaled up or down depending on how many servings you want, and when it's ready to eat, you have a delicious, creamy, warm bowl of comfort.
One of the things that makes this dish so good, in my opinion, is that it showcases not just leeks but three types of onions - leeks, scallions, and yellow onions. Each onion type brings it's own delicious flavor to the soup while not overpowering it, and it's this combination of onions with the potatoes and carrots that make this dish one of my absolute favorites. Pair it with a loaf of crusty bread and salad, and you have a complete meal. My grandkids LOVE this soup and have no idea that they are eating so many onions. They just know it tastes good!
So here's what you will need -
A heavy pot like this one
4 leeks, trimmed, washed to remove the sand and dirt, and then chopped. (Seriously.. make sure to clean them well. You don't want to be eating sand/dirt in your soup!
1 medium yellow onion, chopped
1 bunch of scallions (green onions), chopped
3 tablespoons salted butter
5 potatoes, washed, peeled, and thinly sliced
3 carrots, peeled and finely chopped
4 cups chicken broth
1 cup whole or 2% milk
Melt the butter over medium heat and then add the leeks, yellow onion, and scallions . Saute until they are soft and beginning to brown. Add the chicken broth, potatoes, and carrots, and cook slowly until the potatoes and carrots are soft. At this point you can puree the soup using an immersion blender or regular blender or leave it chunky, which is what I prefer. If you decide to puree it, once it's smooth put it back in the pot, add the milk, and reheat slowly so that the milk doesn't curdle. If you don't puree it, add the milk once the potatoes and carrots are soft, and then once the soup is hot again (do not boil!) it's ready to serve.
