An Easy Cold Weather Soup Option

I don't know about where you are right now, but it's cold here. Colder than usual for this area. Cold weather has me thinking about soup, and one of my favorites is this cheese soup. It's easy, it's filling, and it makes a warm, comforting soup perfect for these cold winter days.

I'm honestly not a big "soup" person although members of my family are. I have to be in the mood for soup, and it usually hits during the winter. My mom made this soup a lot when I was growing up, and I usually make it at least once every winter. I've also been known to double the recipe, depending on how many people will be joining me for that particular meal.

Here's what you will need -

  • A decent-sized pot to cook it in. I usually use my 4-quart stainless steel stock pot like this one.

  • 3/4 cup diced fresh cauliflower

  • 1/2 cup chopped carrots

  • 1 cup chopped onion

  • 1 cup chopped celery

  • 1 cup diced potatoes

  • 1 stick butter

  • 2 tablespoons cornstarch

  • 1 lb Cheddar cheese, grated

  • 2 cups boiling water

  • 1 can evaporated milk

  • 3/4 cooked chicken (can also use ham or turkey)

  • 1 teaspoon Worcestershire sauce

  • 1/2 teaspoon

  • garlic powder to taste (optional but really.. why wouldn't you use it?)


Melt the butter in the pot in a skillet and saute the vegetables until they are tender and the onion translucent. In the pot you will be using but not over heat combine the cornstarch and cheese, and then pour the boiling water over it. Stir vigorously until blended. Over low heat add the vegetables, evaporated milk, and seasonings, and simmer until thoroughly heated through.

I love this with a loaf of freshly baked bread or biscuits, but it's just as good with nothing accompanying it. It's definitely one of those "warm you to your soul"-type dishes and perfect for a cold winter day. Enjoy!
