Have a family gathering coming up and you want to make something special but don't have a lot of time? Or maybe you just want to bring something that tastes great and was very simple to make? That's Casserole Potatoes.
Casserole Potatoes is a side dish that fits any meal where plain old mashed potatoes could use an upgrade, and you can scale it up or down to fit any number of servings you need.
It's simple to make and only takes a few ingredients, so here's what you need -
4 cups of hot mashed potatoes, seasoned with salt and pepper to taste (2 pounds of raw potatoes)
3 8oz packages of cream cheese, softened
1 small onion, grated (not chopped or sliced)
1 teaspoon parsley, finely chopped
1 egg, beaten
Preheat oven to 350 degrees.
Combine all of the ingredients in a large bowl and mix well. Butter your baking dish - yep, butter it, not cooking spray - and then spread the potato mixture in the dish. Bake at 350 degrees for 45 minutes.
Serve hot with or without gravy. It's so good you don't really need anything on it.
Also, it can be made ahead and frozen, just thaw completely and then bake as instructed above.
