Budget-Friendly Meatloaf

Beef prices are crazy right now. A pound of ground beef is going for what I used to pay for a ribeye steak (when it was on sale), so I've been thinking lately of how to make meals that are just as good but substituting other proteins that aren't as expensive and can also feed a lot of people. We're now a family of 9 when we get together, so that's becoming more and more of an issue.

If you need to feed a lot of people, this meatloaf is for you. It's tasty, easy to make, and uses ground pork and ground turkey instead of ground beef. Both turkey and pork are milder in flavor and take on a lot more of the flavor of the other ingredients that you use, and so this makes a delicious dinner option without the sticker shock.

This recipe makes 12 servings. You can definitely scale it down if you want, although cold meatloaf sandwiches for lunch the next day are definitely something you should try, if you haven't already. Also, I'm not a fan of the ketchup glaze that's typically on a meatloaf. If you want to make your own and have it that way, you do you. No criticism from me, I'm just going to do something different.

Here's what you will need -

  • Extra large loaf pan (I like this one)

  • 2 pounds ground turkey

  • 1 pound ground pork

  • 4 eggs, beaten

  • 1 onion, chopped

  • 1 teaspoon dried basil

  • 2 teaspoons salt

  • 1 tablespoon minced parsley

  • 1/4 teaspoon garlic powder

  • 1 teaspoon ground black pepper

  • 1/2 cup dry breadcrumbs

  • 1 package brown gravy mix


Preheat oven to 350 degrees.

In a large bowl mix eggs, breadcrumbs and seasonings until they are well combined. Add the meat and onions and mix together well. If your loaf pan is not nonstick, spray it well with cooking spray and then pack the meat mixture into it. Make the gravy according to the package directions, pour it over the meat mixture, and bake for 1 1/2 hours.

When it's finished you will have a moist, delicious meatloaf. To make it a complete meal serve it with scalloped or mashed potatoes and a green vegetable.

And don't forget to make those sandwiches the next day!
