I just returned from a week away from home. It was 8 days with my dearest friend where we did literally nothing but nap, watch movies, cuddled our dogs, work on our projects (mine is an afghan), talk, and eat things we normally wouldn't like chocolate. Lots and lots of chocolate. It was glorious.
So of course, now that I'm back home I've still got sugar on the brain, which got me to thinking..
There's truly few things better than banana pudding. Don't even try to fight me on this. It's true and undeniable.
Most nanner puddin's are made the same way - pudding mix, milk, vanilla wafers, bananas, and whipped cream. - but mine is just one ingredient different. I learned this variation several years ago when it was brought to a work luncheon at the company I where I was working at the time, and when I tried the first spoonful I was hooked.
This is a simple recipe that doesn't need any fancy equipment or dishes - unless you want to, of course. Does it need a trifle bowl? No, it just needs a bowl deep enough so that you can create some layers.
Does putting it in a trifle bowl add a little "something" to it? Absolutely, but again.. it's not necessary. Just make sure you have a bowl that's deep enough and has relatively straight sides so that you can create those delicious layers.
Note: You'll want to make this the day before you plan to serve it because it needs to be refrigerated overnight before serving.
Here's what you will need -
2 3.5 oz boxes of instant vanilla pudding - it must be instant (not cook type) and it must be vanilla
8 oz sour cream - yep, sour cream
3 cups evaporated milk, refrigerated until cold
12 oz Cool Whip or homemade whipped cream, either is fine
1 box vanilla wafers
fresh bananas, cut into round slices about 1/4" thick
Mix together the pudding mix, sour cream, and evaporated milk in a large bowl - but not the bowl you are going to be assembling your dessert in. Once the pudding mixture is thick begin layering it in your dessert bowl, alternating it with the vanilla wafers and banana slices however you like. Honestly, there are no rules to the layering; you can make it as elaborate or simple as you'd like. Once you get to the top of your bowl, top with the whipped cream and then decorate it however you'd like - or don't, that's fine, too!
Refrigerate overnight and then enjoy! It's truly one of the simplest and most delicious desserts there is, and that sour cream adds a delicious element to it that is subtle but there, nonetheless.
