3 Packet Pot Roast

In case you haven't noticed, Dutch ovens and crock pots/slow cookers are two of my favorite kitchen devices, and I use my slow cooker at least once a week and sometimes more often than that. I love being able to prep everything, turn it on and in a few hours dinner is ready!

This is one of my favorite quick prep recipes.

Now.. are beef prices crazy expensive? Yes. Yes, they are. Occasionally, however, I find chuck roast on enough of a sale to get one, and when I do this is my favorite ways to make it. It's very simple, tastes amazing, and only has a few ingredients.

Here's what you will need -

  • Crock pot/slow cooker. I like this one although it doesn't necessarily have to be programmable.

  • Chuck roast - size depends on how many people or how much leftovers you want. I usually use one that is 3-4 pounds

  • 1 packet Brown Gravy dry mix (if you're concerned about sodium, use a reduced sodium variation)

  • 1 packet Good Seasons Italian Dressing dry mix

  • 1 packet Ranch Dressing dry mix

  • 3 carrots, peeled and cut into 1-2" pieces

  • 2 yellow onions, peeled and cut into quarters

  • 6-8 Yukon Gold potatoes, washed and quartered

  • 3 cloves of garlic, minced

  • 2 cups beef or chicken broth

  • 1 slow cooker liner like these - optional but makes clean up so much easier


You can also use other root vegetables that are in season, if you'd like, although it's not necessary. I like to add turnips, parsnips, and rutabagas when I can get them.

Put the liner in the slow cooker or spray it well with cooking spray and then place your sliced vegetables in the bottom. Next, place the chuck roast on top of the vegetables and the minced garlic on top of the roast.

Add the broth and the contents of all three packets to a separate bowl, mix well, and then pour it over the roast and vegetables.

Place the lid on the slow cooker, set it to low and let it cook for 8-10 hours. That's it. That's all you do yet when it's finished you have a delicious tasting roast with vegetables and potatoes in a rich gravy, and you don't really have to fix anything else other than a fresh salad, if you want.
